Recipe: Cheeseburger Casserole

I added a new blog today. It is The Low Carb Diabetic.  The Cheeseburger Casserole is what caught my attention. Besides recipes and encouragement to go low carb, the blogroll has many other diabetes blogs.

When I put things in favorites,I forget them. This time, I decided to put the information in a place I can keep track of it. Hopefully, this blog will help many of us. If you do not have diabetes, I am quite sure you have a spouse, other relative, or someone who could benefit from the information and recipes. At least, we can all aspire to eating more healthily.

  1. I am not diabetic but I have tried at times to cut down on carbs. They are so satisfying and that is what makes it hard. I am sure this recipe is delicious, but I would miss the macaroni! People rave about spaghetti squash and zucchini noodles. I have tried to stretch the pasta with vegetables and limit bread to once a day. I wish you luck also carbs are crash food for me so I try to avoid them at lunch.

      Eating fat is what satisfies you instead of carbs. I thought this recipe was instead of a bun. I absolutely love spaghetti with slices of zucchini. I knew a guy who refused to eat broccoli, but he like lots of meat in his spaghetti. He had no need to reduce carbs. I cut broccoli into smallish pieces like ground beef would be. He ate it happily and never knew he had eaten broccoli. Of course, I told him and he just laughed. I suppose I need to get serious and this in front of me everyday might help.

  2. Sounds wonderful and at 12 g carb would fit in nicely to my diabetic diet. However, the fat from the oil, butter and cheese would put it way over my daily limit. For myself I'd just a tablespoon of grated Parmesan at the table and saute in fat free beef broth.

    Mashed cauliflower is a good substitute for mashed potatoes. And, I recently made a really good New England Clam Chowder using roughly mashed cauliflower instead of potatoes and about a tablespoon of flour to thicken 2 cups of the chowder.

    I've been diabetic for 7 years and maintain an A1C of 5.0-5.2 by diet alone. It's hard but doable.

    1. You are doing well to control it by diet alone. I do not need so much fat. However, I do love the cheese and would gladly give up oil for cheese...lol.

      Daddy loved potatoes, but as he grew older, a few times he mashed up cauliflower. I doubt it was a potato sub for him.

      I would make it with ground pork so I would not be eating beef.
