Wheat-Free Cupcakes

Since my food cravings have not gone away, I still search for "normal" everywhere. Chocolate chip cupcakes/muffins were not a craving. But, as the electric cart passed the package, I realized it said "Gluten Free."  Does that mean "Wheat free"? Yes, it does!

When I got the package home, I realized there are at least two dozen other ingredients. Ack!  Okay, I will eat them and hope I am not allergic to any. The chocolate in the chips is processed with alkali. Later, I will take out all the offending chips and replace with chips containing nothing processed with alkali.

People keep mentioning that it's too bad I have a gluten allergy....well, I don't have any problem with gluten. But, gluten-free means no wheat.

The package of  chocolate chocolate chip gluten-free muffin mix is Martha White. It's in a pouch and on the shelf with regular mixes. While I was in the baking aisle, I looked for rice flour. No luck.

Since I have been under the weather with a bladder infection that seems to get worse, I have just slept a lot. So, no baking, no chocolate chocolate chip muffins.

The Silk made with Almonds is gone. I probably won't be replacing it, even the chocolate. I still craved milk since it did not satisfy anything in me.

Sunday is my birthday, exbf is coming to take me to dinner tomorrow. I feel so awful and feverish, I may just tell him not to come tomorrow!

My plans were: have milk Friday morning and through the weekend to see if I experience any ill effects. I planned to eat yogurt. Plus, I was going to have ice cream after dinner at Ruby Tuesday. Maybe I will put all that on hold and try to recover.

YAY for Martha White chocolate chocolate chip gluten-free muffins!

  1. Linda - I was curious about the rice flour as I know ALL the flours not made of wheat can be purchased at a health food (not a vitamin store) store. As I was searching on Google I found a listing for a Betty Crocker All Purpose Gluten Free Rice Flour Blend. It's in a box, so if a store has it you might overlook it because flour usually comes in a paper/cellophane/plastic bag.

      I have been researching things, just had not gotten to that since I only found the muffin mix yesterday. We have nowhere to buy things like this. Well, some of the health food stores may now carry more than vitamins and weight loss stuff. I can call. Because of this bladder infection, it may take me a while to find it, even on the phone. Yes, I would expect flour to be in a bag.

  2. So you are only allergic to wheat and not other gluten containing foods like oats, rye, or barley?

      One of the first things the allergist said was that I had no gluten sensitivity. I kept mentioning my perceived problem with wheat. He confirmed that with a test. Rye bread has wheat flour in it. Too bad. I love rye bread. He said I had no sensitivity to gluten.

  4. I have never tried the MW gluten free mixes but all the others I have had are delicious, so I would think this would be too. Try Sprouts for rice flour. They have it

      I, too, was confident it would be delicious. I will have to get exbf to bring some. Oh, no. He cannot because he has more troubling walking than I do. Thanks, I will look into that.

  5. A couple of months ago I had a bladder infection that went systemic and I felt awful. Much worse than with a regular one. It took a few days of antibiotics before I felt better. Hope you're on the mend and feel better soon.

      Yeah, I have been so ill. Last night, I felt just a bit better, actually still horrible. This morning, I still feel horrible, just a touch better. I told exbf and told him not to come today. I am having trouble sleeping. Then, I sleep too long.ugh Thanks.

  6. I've bought rice flour and used it for breading onion rings for a recipe- Bob's Red Mill found where they keep the organic ingredients- $$ too although I've seen it cheaper at Big Lots.
