Strawberry Shortcake and Recipe


I made this with the strawberries I got at the market and froze. Sunday, I set out a half-pint to thaw for a Memorial Day treat.

My Recipe:                                          Red is original recipe

1 1/6 cup Bisquick (1 cup and 3 tbsp.) 2 1/3 cups
1/3 cup milk                                          2/3 cup
3 Tbsp sugar                                          3 Tbsp.
3 Tbsp butter or margarine, melted       3 Tbsp.

None of these measurements have to be precise. It is good with casual measuring...lol.

Mix all to a soft dough. Drop by spoonful onto cookie sheet. Bake 10 min. at 450 degrees.

This makes three shortcakes. I half the Bisquick and milk and leave the sugar and butter the same. It is soooo yummy this way. I rarely increase butter and sugar. Usually, I decrease those two ingredients. No way with shortcakes! Since I am drooling, I should quit typing, wipe my chin and go bake these.

Basically, I have a very buttery and semisweet biscuit that melts when strawberries are poured over it.

I baked these on parchment paper on a plate. The Bisquick is waay past date, so they did not rise as they should. It's okay. All is well. I ate them and they were tasty. The Bisquick had been in the freezer than the refrigerator, so it was not buggy or rancid, at least. The bag of mix was inside a freezer bag inside the box.

Exceptions
I love whipped cream but never buy it. I had rather whip my own, but will eat any. But, it is an expense. The children never had or wanted whipped cream for breakfast (see below). At other times they did.

I think you could add sugar and melted butter and get the same results. But, I am not a good biscuit maker.

Strawberry shortcake is the only reason I buy Bisquick.


Breakfast
About four times each summer,  I would make this for my children for breakfast. We used no whipped cream. They had a glass of milk with this breakfast that seems more like dessert than breakfast food. Since the strawberries were fresh and barely sweetened, the sugary, buttery biscuits seemed of little consequence. We did have this after other meals during the summer.

I thought this breakfast was no worse and actually better than jelly on toast or pancakes and syrup. My husband was adamant when he complained I gave the children dessert for breakfast.

  1. I love strawberry shortcake! When I was growing up it was not out of the ordinary for my mom to give us angel food cake and milk shakes for breakfast...we had a milk cow, lots of chickens and a huge berry patch: perfect makins' for an awesome breakfast! I'm sure our breakfast was much more nutritious then the HFCS laded breakfast cereals the kids eat these days.

    I tried to explain the nutrition factor to the ex, but he had preconceived notions, mostly from watching others or reading cereal boxes as a child and adult.

    Anything homemade is better than the breakfast cereals and fast food sandwiches children eat nowadays.

    I wish we had a cow and berry patch when mine were young. It sounds like you had a good childhood.

    It is a powdered baking mix. You can make biscuits, pizza crust, pancakes, anything. I think it has something to make bread rise (baking soda), and oil. I know that it would be cheaper to make anything from scratch. The only things I use this for are making shortcake and sausage balls (Bisquick, sausage, and shredded cheese.

    It is one of those mixes a person can make and store at home. I have had this box for three years, so you see I rarely use it.

  5. People eat biscuits with jelly for breakfast. How about scones? They are virtually the same. I think strawberry shortcake for breakfast is a wonderful idea! On occasion I like to have breakfast at dinner and often eat leftovers at breakfast.

    We had an "Aunt" in Arkansas who, as a treat for us, made biscuits and chocolate gravy! What a treat! It was basically hot pudding and biscuits. If you Google it you will find that it is a popular breakfast in the South. Have you ever heard of it?

    I have never heard of sausage balls. I Googled it and now I just may have to make some. Do you use the standard recipe or do you have a different one?

    Same thing! We never liked those little cups for shortcake. Eating anything for any meal is okay with me. I guess I just like to eat.

    I have only heard of chocolate gravy in the last five years, and I have lived in the South all my life.

    The recipe I used only has 1 lb of sausage, grated medium cheddar cheese and Bisquick--just three ingredients. You might prefer sharp cheddar cheese. I have heard of other things put in them, but would not like them. This is something that is served lots at parties, get-togethers, finger food. I suppose I made the first ones about forty years ago.
