National Egg Day

That's right. It is an egg-cellent morning with low humidity and sunshine. Do I crack you up? I read that somewhere last week.

This morning, breakfast was two scrambled eggs, two pieces of bacon, milk and orange juice.



Four more eggs went into the freezer, two in each little Ball canning/freezing jar.

Other than feeding the hens, that is it for National Egg Day.

  3. Just found your blog and have been reading.... :) We are at this time of the year getting a lot of eggs! I did not know eggs could be frozen for later is there something you add to them before freezing or just stir and freeze?

      Hi, welcome! Instructions I read online said to add sugar or salt. I add nothing. I use a beater and pour them into the jars. Since I am picky, I do strain the eggs after beating and before putting into jars. Now, stirring is just fine, just not the way I scramble eggs.
