Chocolate Covered Cherry Cake

Ingredients + 2 eggs


This recipe is delicious. It came from The Cake Doctor, given to me way back last July by Janet. I don't know why I have not used the book before, especially since I found this recipe.

The recipe is simple: 

Take one chocolate cake mix, add 21 ounce can of Cherry Pie Filling, and two eggs. Beat, put in oiled 9x13 inch cake pan. Cook at 350 degrees for 30 to 35 minutes.

Here is where I changed it. The author of the book admits she changed it by putting icing on it, so I did, too. Instead of putting an icing on the cake, I used cherry jello as in a strawberry poke cake. Okay, I cannot find a Strawberry Jello Poke Cake like I make. 


Strawberry Jello Poke Cake Recipe

Take the white or yellow cake mix
2 eggs
1 pint of frozen strawberries,t hawed, or  filling
two eggs
Beat
Pour in an oiled 9"x13" pan
Bake for about 35 minutes
follow below: Jello addition
top with Cool Whip

Jello Addition

Take the 3 oz box of strawberry or cherry jello and dissolve in 1 cup boiling water. The cake needs to be sort of cool, but not completely. Poke holes 1/2 inch apart on the top of the cake. Pour the slightly cooled on the counter Jello over the cake. Refrigerate.

POKE

I use a fork. Some recipes say to use the handle of a wooden spoon.  Pour all the Jello over the cake even if it seems like too much.

When I looked for the 9x13 inch pan, I could not find it. Since it was 1 am or past, I grabbed the glass pie plate and the Corelle casserole. I had two glass pie pans out to use. I should have.

It is delicious.

Now, you have two recipes in this one post. I imagine any kind of fruit and Jello would be great.

I should have put this in my heart-shaped pan. This is the season.

  2. I have made the cake with the 2 eggs, can of cherry pie filling and chocolate cake mix and I added chopped walnuts and lightly dusted with powdered sugar === LOVED IT! DH wanted me to try it with blueberry pie filling and a yellow cake mix -- tasted great, but looked pretty much like concrete as the pie filling make the cake mix turn sort of greyish!

    1. Powdered sugar does sound like a good addition. It sounds like that cake could use some food coloring and a white cake mix. Concrete cake? That's really different.

  3. I haven't made this cake as I do not like cherries...the texture bothers me...but I like the flavor, so when ours are ripe, I name jam.

    I DO make poke cake. I get Royal brand gelatinous for a quarter, and cake mixes at less than $1. Poke cupcakes are my kids 'treat of choice for the classroom. I use appropriately holiday themed liners, and make my own picks. Lime poke cupcwkes are a hit on St. Patrick's Day. The teachers appreciate the lack of frosting, which means less mess!

      I cannot stand cherries in the chocolate covered cherries that have the white stuff. Cherry pies are on the bottom of the list. Maraschino cherries ruin the desserts and tops of sundaes. But, this I like...lol.

      That sounds like a good and inexpensive treat for classrooms. Do you buy the cupcake liners after holidays to save for the next year? I got a whole package of picks for a dime. You are clever to make picks, too!

      I am quite sure the teachers appreciate you!

      Maybe I will try a yellow cake with pineapple and pineapple jello.

  4. Now then, that recipe makes me hungry. We now have good old Betty Crocker is England. As for Jello, no go, but we have alternatives.

      These are the brands I use, but I am sure that you can substitute. This is addictive, so steel yourself for the yummy taste. Glad I tempt you.

  6. Haven't made that cake but sounds delicious - I know my kids would love it. Used to make a Cranberry Orange Poke Cake from Halloween thru Christmas. Yellow cake mix, can of whole cranberry sauce mixed into orange jello, when cool to room temp, or refrigerated, serve topped with whipped cream and chopped nuts. Quick, yummy and elegant.
    Chocolate covered cherries with the white stuff inside - haven't 'ripened' enough, leave them for another couple of weeks and try again.
